I've been doing the occasional Friday BBQ's with my hispanic employees for a long time now and without fail, the goose meat goes fast when I cook it this way. I hope you like it.
here we go.

The marinade will do approx 5-6 geese and serves alot of hungry folks.

Slice breasts into steaks approx 1/4-1/2 thick. (kind of like you'd do for jerky)
make the marinade.
it consists of:
40 oz of cheap beer
2 Lemons squeezed and then chucked in with the beer.
3 tablespoons dried crushed oregano leaves (cheapest when bought in the bags found with the Mexican spices at the store, only 75 cents or so)

4-5 garlic cloves crushed and thrown into the beer

A chopped onion
As many chilies of your choice, this just makes it spicy
1 habanero, chopped and mixed with the marinade makes it spicy enough for me. Otherwise I chop up some jalapeno's or serrano's and throw them in.

1/4 cup of sugar

tablespoon of salt and pepper each.

throw the meat in the beer mix and let it sit a minimum of 3-4 hrs.

Grill the steaks over a HOT flame, it only takes a couple minutes.

chop the meat into smaller pieces, throw into the tortilla of your choice with some guacamole, pico de gallo, salsa, chilies and whatever else you might like.

this also works with venison, ducks, beef, etc.
