If you havent ever made phesant jerky then do it! My dad and I hunted Phesants this year like we do every year in Pendleton Oregon and got a few. So we made some Phesant jerk with the duck jerky we made. We just threw in like soy sauce and teriyaki and cooking sherri and garlic and vinegar and water and some other junk and let it sit a day or 2 on the refridgerator and then dryit for a few hours. Then smoke it for atleast 5 to 7 hours. That was the best stuff. For the exact recipe email me I have it.

Sounds good ORgoose, but, I couldn't get myself to use pheasant for jerky. Not when there's pheasant fajitas and BBQpeach pheasant etc.
