Try this:
Fillet breast from carcass
Lay each slab of meat on the table and cut through breast parallel to tabel (so it is thinner)
Beat with a tenderizer mallet until tender
Roll in flour
season to taste
Fry in bacon grease until done.
Serve with Fried potatoes and onions, biscuits and gravy and nothing taste better than that.
