Honey Mustard Ducks

4 Puddle Ducks ( Skinned )
3 Onions
2 14oz. cans of chicken stock
1 bunch Green Onions – chopped in sections
2 Bell Peppers
1 head of Garlic
2 tablespoons Thyme
1 cup of wine(more or less, I use white )
1 cup Honey
2 teaspoons Dry Hot Mustard (or to taste)
2 tablespoons Vinegar
1/2 pound Bacon

Place the ducks and next seven ingredients in a large stock pot, cover with water. Cover and cook on a slow boil till tender. About one hour for teal, longer for big ducks. Do not over cook or meat will fall off the bones. Remove ducks and place in a baking dish. Mix vinegar and mustard till smooth, add honey and mix well. Baste ducks with the honey mixture and cover with strips of bacon. Add a little stock to the pan to keep the honey mixure from burning. Place baking dish in a 300' oven and bake for about 30 minutes, basting several times with the Honey mixture. Serve with a big slab of Corn Bread.

Note – Sometimes, I’ll boil the ducks the night before and let them sit in the stock overnight (in the fridge of course)before baking the next day… Gives more time for all those good seasonings to soak in…
