Duck or Goose, Wild Rice Casserole

2 puddle ducks, or a goose
1 bag crab boil
2 onions quartered
1 bell pepper
2 stalks celery

½ cup unsalted butter
1 onion
½ bell pepper
2 green onions
2 cloves garlic
¼ cup flour
1 cup chicken stock
½ cup red wine
2 tbl parsley
1 ½ cup cream or half and half
1 pkg long grain and wild rice.

Salt, pepper and tabasco to taste.

Combine first five ingredients and boil ducks until tender. Remove meat and set aside. Sauté onion, green onion, garlic and bell pepper in butter then mix in flour. Add stock, wine, cream, ducks and cooked rice. Add salt, pepper and Tabasco to taste. Place in 2-quart baking dish and bake at 350 for 30 minutes.

A little lagniappe : Add a little Jalepeno Jack cheese on top and brown a bit. Talk about good...
