Teal are my favorite eating duck,(and we shoot lots of greenwings here in UT) so they get the honor for the title, but this recipe originated back when I was growing up in AZ and we'd shoot near a thousand doves in the two week season between me and my family and friends. But I've also cut goose breast fillets into smaller steaks and they turn out great as well.

1. Use either teal or dove breast, bone in!
Marinate with extra virgin olive oil, basalmic vinegar, and lots of garlic and fresh ground pepper.
2. refrigerate overnight.

3.wrap the entire breast with slices of good smoked, thick-sliced bacon. (Use toothpics to attach the bacon)

4. Grill on med heat (be careful, the flames will flare up with the bacon grease)

5. cook to preference, I like it med. rare, (just a hint of blood)

6. GOOD EATS!!!!!!!!!!
