Hey guys and gals, this is a great recipe for "roast canada goose". We call it flying roast beef 'cause it often tastes like a good cut of beef.

Take a plucked and washed Canada Goose, rub skin with 1/4 cup melted butter, and 1/4 cup olive oil. Season with salt and pepper. Then HALF cook some wild rice and stuff the bird with it. Place in a roasting pan, and toss some of your favorite veggies around it. I like to use quartered potatoes, big mushrooms and a couple of small onions. Toss in a half a cup of water to keep it moist, cover with foil, and roast at 375 for 45 minutes. Uncover, and roast for an additional 1 to 1-1/2 hours depending on the size. Baste this baby often!! I use a thermometer to see when its done, the temp should read 'bout 165 to 170 degrees. Serve with the rice stuffing, and veggies. Enjoy!! <img src="graemlins/wink.gif" border="0" alt="[wink]" />
