Deer Bologna

Any of you guys ever have Deer Bologna? I had a room mate in College from PA and his family made the best
venison sausage and they called it deer bologna. Well thanks to Chronic Wasting Disease here in CO, I've filled a couple of depredation
tags in the past week and have an overflow of venison. I was wondering if anybody here had a deer bologna recipe. I also think that it would work
fantastic with geese.

Craig, Don't know if will help you but there was an old post with a link about goose salami. Maybe you could swap the goose meat for venison??? :confused:

Check at a local butcher shop that makes sausage for a seasoning called Witt's Salami Seasoning. If you can find it let me know and I will PM you the recipe that I have used for over 20 years. Excellent flavor by itself or you can add granulated garlic, onion powder and Tony Chacheres Creole seasoning for a spicier sausage.
