Anyone have a good recipe for a good goose summer sausage or something similar ?? I took some to my local meat guy last year and he couldn't get it right. It came out too wet and needed to be fried or cooked in some way before you ate it.

Here is one I use on SOB's Old Time Salami 7 lbs ground sob and 3 lbs pork . 10 teaspoons (tp) Mortons quick tender ,5 tp mustard seed,5tp garlic salt, 5 tp hickory smoke salt, 8 tp pepper corns mix well keep in refeg and coverd ,every day knead for 4 days then form in to logs bake on bottom rack at 150 for four hours turn and bake four more inturnal temp. must be more than 165. no casing need makes its own . good old time hard salami goes good with beer
