TWO LBS. NEW POTATOES
SIX SPRINGS OF SAGE
TWO SKINED AND BONED GOOSE BREASTS
THREE MEDIUM ONIONS (CUT TO 1/2 INCH THICK)
OLIVE OIL
SIXTEEN FLUID OUNCES MILK
SALT & PEPER


Boil the potatoes in there skins until tender in plenty of salted water, with two of the springs sage.

Pre-heat the oven to 400 degrees.

Heat a dry frying pan suitable for the oven(or a roasting tin)over high heat until very hot.

Place the goose breast in the pan and sier for two minutes on each side.

Season the top,bottom and sides with salt and peper.

Continue to cook for two minutes on each side and then transfer to the oven and roast 10-20 minutes,or until done.

Turn the oven off and open the door, let sit on the out side of the oven rack for ten minutes.

peel and chop the onions as finely as possible.

Saute onions in three tbs. of olive oil for ten minutes without browning.

Meanwhile, remove the springs of sage and chop finely,then mash the potatos.

Add the onions to the potatoes along with the milk, mashing the hole time.

When you reach a suitably consistency, season with salt and peper and stir in a tsp. of chopped sage leaves.

Add more sage to taste and serve with the goose cut into slices.

Yield five servings
