Apricot Goose Wraps

This is one of the absolute best ways to cook your goose (no pun intended). Cut the goose breast into strips about inch thick. Place them in a marinade of apricot jelly/preserves, black pepper (to taste) and bourbon (enough to liquefy the jelly/preserves to a syrup consistency). Let marinade overnight. Cut a bell pepper (use different colors for presentation) and Portebella mushrooms into strips. Take a piece of bacon and place the marinated goose on the piece of bacon with a strip of bell pepper and mushroom. Roll up the pepper, mushroom and goose with the bacon and put a toothpick to hold the bacon to the goose meat. Place this on the barbecue grill on medium heat and cook until the bacon is done. Remove from the grill and enjoy.:cool:

Blacklab112, this is a very good receipe, one very similar to a DU show a few years back. I substitute Frangelico Liqueur for the bourbon and it gives a little more taste. Makes a great appetizer also for the holidays.
