Cut-um whats the best way to cook a turkey that was just shot? Surely you can pull some recipes up for an old pal, cant ya? Anybody else, any suggestions will be greatly appreciated. Thanks.:Cop: :Rich:

It kind of depends on how old and tough of a bird it was. I've learded that wild turkey isn't the best when roasted like a store bought thanksgiving bird.

I prefer to inject them with marinade and deep fry them in peanut oil myself. However, the bird needs to be plucked to do this, and it can be a pain. If you do deep fry it, cut off the legs and thighs to use in a stir fry or something else. From what I've seen, you won't be able to eat deep fryed wild turkey legs. They're too tough.

Turkey Parmigian (sp?) is really good too. I take just the breast meat, and cut it in half, like butterflying, so it is about 1 inch thick. Then, I cut it into portion sized pieces, about 5 inches around. I coat the pieces in breadcrumbs, and parmigian cheese, cover with spaghetti sauce, and cook on 375 until done (about 45 minutes, but watch it close). This way is great for an old tough bird.

Another way to fix the breast meat is to cut it in chunks or strips, and bread it like fish and deep fry it. That works great for a tough old tom too.

To try to answer the original question by Michael before John got out of control and offended the thread. I prefer to cut the breast into strips or actually cube chunks and fry them like nuggets. Awesome. A buddy of mine has his smoked and the cuts it up for chunks but I haven't really noticed that much difference in taste.
