7lbs goose meat
3lbs pork
4T salt
1T sugar
2T dry mustard
1T ground sage
1T ground coriander
1T black pepper
1T ground rosemary
2t cayenne pepper
2t nutmeg
hog casings
2 cups BEER any will do I like dark beer
add all spices to the beer mix then refrigerate . Cut all meat in to pieces that will fit in the grinder and mix with spiced beer then grind with fine plate and mix again. Stuff in to medium hog cases make about 5" long and twist. refrigerate and freeze any not used in a few days . If you like it a little spicer just kick up the cayenne and the paprika a little . Not dogs but Damm good:BM:
