Are you supposed to marinate the goose meat first before you grind in the pork, etc?
Iím thinking of making some slim jim type of goose sticks that are smoked too. Do any of you have any recipes for this? Any specific recommendations in the process one should know about?

I have never marinated the meat for sausage. When I made slim jims or "hot sticks" as we called them, we used a seasoning that we bought from our local butcher. Unless they have their own recipe, they are usually willing to sell you the spice packets. There is instructions on the packet, so it is pretty easy to use. Just have to be good with math in figuring the amount of seasoning for the amount of meat. The hardest part is stuffing the hot sticks into to the casings.
I would imagine that marinating the meat first and then mixing in the pork would create a milder flavor, but its hard to say.
