2 quarts spring water
1/2 cup pickling salt
1/2 cup mortons tenderquick
3 tablespoon sugar
2 tablespoons mixed pickiling spice
8 whole black peppercorns
1 or 2 garlic cloves minced

heat all ingredients in a glass or enamel saucepan to boil. Turn off heat and cool brine.. Pour brine over meat and brine 4-5 days

place meat in a dutch oven, cover with cold water, heat to a boil, drain, cover with cold water again, heat to a boil and simmer 3 1/ to 4 1/2 hours.
