View Full Version : Duck/goose kabobs

Here is something quick and easy with little preperation. Just need to do it a few hours before cooking time.

Take your breasted out duck/goose meat and cut it into cubes about the size of a 50 cent piece.

Take the cubes and put into a zip lock bag or two depending on the number your marinating. Add Terriakie (SP?) ans shake it around till all the pieces are covered and put into the fridge for a couple hours then repete the shaking it up again to keep the meat covered. While waiting on this be soaking some kabob sticks or tooth picks in water so they wont burn.

Now take the Meat and put a slice in the middle and put a piece of water chestnut or halapienio in the slice. Now take some of the thick sliced bacon and wrap the cube in the bacon and put in the stick to hold together. Repete this along with your favorite veggies on the kabob stick till your out of cubed breast meat.

Fire up the grill to medium heat and when hot put them on the grill and cook the kabobs till the bacon is cooked and the meat should be a medium/ med. rare.

This recipie is great for using up a lot of ducks/geese to reduce posestion limits so you can go out and put the carnage on more birds.

that recipe works pretty good with Jack Daniels as well.

JD as the marinade you mean or as a toddy to go with it? I bet that would add an interesting taste to it.!!
