View Full Version : Favorite Duck and Goose Jerky

Take and slice you meat about a 1/4" thick. You might want to try and quick Frz it for about an Hour this makes it really easy to cut

Use 3 to4 cups Teriyaki Marinade or sauce
one cup brown sugar
1/2 cup white sugar
1/2 an onion chopped
1/2 cup real maple syrup
1 teaspoon of garlic

Add your waterfowl and let soak for 1 to 2 days most of the time i have about 5lbs or more to smoke when i make jerky. After you put the meat on the rack smoke it with one pot of chips only. I use Alder or Cherry they seem to work the best and gives a much better flavor. It will take anywhere from 6 to 10 hrs to finish.

Let the meat cool and place in a Zip lock bag for some reason the zip lock brings out the flavor. my wife and kids dont eat duck or goose but when i make it this way its gone in a couple of days

It sounds tasty :hest: I have a friend that smokes his for awhile and then puts in a dehydrator. Our family just devours the jerky when I make it. I'll have to give this recipe a try:TT:
