This is a great dish for duck breast (it would work for goose too but is best with duck).

1. Get a couple boneless duck breast (inject meat with a garlic/herb marinade)
2. Put in a baking dish
3. Cover with a can or two of crushed or stewed tomatoes
4. Put a spoonful of regatta cheese on top of each duck breast
5. Bake at 350 until done

Serve on top of fetticine with a sun-dried tomato alfredo sauce...one of the best duck dishes period!

Sounds like another one I'll have to try, I'm going to run out of duck and goose before its all done!
