this is for roughly 2 pounds of goose - it is a fish recipe, but just did it today and it totally awesome:

RUM SMOKED GOOSE

Pint of Captains spiced rum
brown sugar
salt
pepper
wood for smoking (I used oak soaked for a couple of hours)

cut the breasts in half, covered them with Captains and let them sit for about 20 minutes. dump the rum:CY: and dry the breasts.

Mix one cup brown sugar (packed firm) 1/2 cup salt and a tablespoon or two of pepper.

Cover the bottom of a pan with about 1/3 mixture. place the breasts on top and cover them with the rest of the mixture - pat it into the meat and let it sit in the fridge for about 4-5 hours - the salt will draw the moisture out of the meat.

Remove breasts from cure, thoroughly rinse cure off, and pat dry.

Get yer grill goin and get the wood to smokin---place the breasts on the grill on INDIRECT HEAT - REAL IMPORTANT!!! Let 'em cook till they are dry - cool - serve....now I ain' gotta tell ya what to do with the rest of the Pint of Captains, but if ya wanna try somthin good mix 'er up with some Vanilla Coke and ice:pl: :pl: :pl:
