my favorite way to cook duck or goose is:
-cut the meat into cubes about the size of a golf ball
-Marinate in red wine for 4 - 6 hours
-rap bacon around the cubes and cook on the grill (using seasoning salt is good aswell)
this is a very excellent way to cook your birds...
