Soak refrigerated goose breasts 24 hours in milk in a freezer lock bag.
Cut goose breasts in halves lengthwise.
Heat 3 tablespoons of olive oil in an open saute pan on high
Add in 3 thick, diced, slices of white onion
Add 1 teaspoon of dried "minced garlic" (substitute fresh whole minced garlic clove if available).
Reduce to medium; heat & stir onion & garlic until onion dices brown.
Add in goose pieces - cook until outside browns and turn evenly for 5 minutes
Remove goose pieces.
Add while stirring once cup Dry Riesling (white wine - substitute beer if preferred)
Stir in 3 tablespoons flour
Add in 1 cup cool water
Continue stirring until sauce begins to thicken
Add in 6 tablespoons butter.
Salt & pepper to taste.
Stir until butter melts.
Pour gravy into gravy bowl.
Slice cooling goose pieces into 1/4 to 3/8" thick strips.
Pour two more tablespoons of olive oil into saute pan, back up to med high heat, return goose pieces to pan.
Cook to desired color (2 to 3 minutes).
Serve goose with gravy.
Your choice rice, green vegetables - hearty Pinot Noir goes well too.
