Here's a pretty simple recipe, much like the stroganoff recipe that was posted.

Take two-four legs AND thighs and throw em in a pot of water. Add several chicken boulion cubes (about 10) and any other seasonings you feel like. I like to add garlic salt, creole seasoning, salt and pepper, crushed red peppers. Bring this to a boil, then simmer for about 3-6 hours. The longer the better. Remove the meat from the water, and allow it to cool. Add about 2 or 3 bags of frozen egg noodles to the water that you cooked the meat in, and cook as the package on the noodles directs. After you have de-boned the goose legs and thighs, put the meat back in the pot with the noodles to warm it back up. At this point once the noodles are done, you are ready to dig in. I also like to add a little corn starch and water (to thicken the sauce) but this is purely optional. I also will sometimes put sour cream in it (on individual servings) at the table.
