I was experimenting this weekend and came up with an awesome smoked pork recipe.

2 1/2 C. brown sugar
2 T. mortons hot salt
2 T. cajun seasoning
5-8 lb pork shoulder

Injectible marinade
1/2 C. brown sugar
1 t. hot salt
1 t. cajun seasoning
1 C. HOT water


Inject pork with marinade and let sit in fridge for 2-4 hours.
Then mix the brown sugar, hot salt, and cajun seasoning together. Rub this generously over the pork. It should put a covering about a 1/4" thick over it. Put it on the smoker for 2-4 hours or until done. Enjoy.
