Goose breasts, butterflied. Marinate for 4 hours in a mixture of olive oil, lemon juice, garlic powder, fresh basil and thyme if you have it, soy sauce, and chopped onion.

Light grill on "HIGH", and let it get HOT. Cook 4 minutes on each side (rare).

Slice across the grain like a London Broil steak, and serve hot woth toothpicks. Folks can't get enough of 'em. Most think it's beef.

That's real close to what we do. Marinate in: Olive oil, garlic, salt pepper and a dash of Worcestershire sauce.

Grill hot and fast and serve rare with a horseradish fold.---Flying Prime Rib!!

I'm diggin this one out of the archives, but I tried this yesterday, and it's the best goose I've ever prepared. As advertised, it tasted like prime, tender beef. Unreal :TT:

This one works SUPERB!!! with young geese!!! May not be the best recipe choice with older birds, IMO.

BLB -- THANK YOU -- for having an uglier dog than me!!!

sounds great! do any of you have a pic of a butterflied goose brest?
I really want to try this and I am having a hard time with the visual lol
what about the artery that goes through the brest? do you try to cut that out or leave it in?
Thanks for your time folks! Jonathan
