Wondering if any of you master chefs have any recipes or advice for making goose sticks like people do for beef or deer sticks.

Wanna use up a few geese in the freezer at once and thought goose sticks would be a nice way to do it, plus a nice snack in the blind.

Have a local locker that I hope will be able to do it since I dont have any of the meat processing equipment etc.

I tried them last year. I just used a Jerkey Shooter. They were ok, but if you can find a meat locker that will mix the goose with some other meat, I think they will be better.
