I am into grilling and cooking and have come up with a recipe of my own that I use with waterfowl.

I use the breast meat. First thing I do is cut away the wing bone gristle and I flip the meat over and cut off the silver skin. This wastes some meat but it seams to expose the meat better to my marinate. I cube the meat up and put it in ziploc bags. I add red wine vinagarette(wishbone salad dressing) to the meat. I use generous amounts and put the bags in the frig. I squeeze the meat around a few times during the day. I like to let the meat in the frig at least 12 hours and 24 hours is better. I then get the bacon out and wrap the meat and put them on skewers. I put zucchini and squash slices in between(you can use bell peppers or onion if you want). The final addition to the k-bobs is Ex caliber pork rub. This is a sweet tasting kbob so if you like your food hot and spicy this is not the deal for you. Good way to use up the freezer meat.
