I had some smoked goose breast last year that was comparible to the sliced pork appitizers with sesame seed you get at a chinese restraunt. Do any of y'all have a good recipe to achieve these results???

I like to pick a few geese each year and inject with a brown sugar and tenderquick mix, let it sit for a couple days and then smoke it in a smoker with a water pan. When its 180 degrees inside it's legs, it comes out and it is a tasty treat. Landowners can't believe it is goose.

We are planning on smoking skinned out breast halves any other ideas for it??
