Here's another on of my wife's favorites

Marmalade Goose:
2 cups milk
1/2 teaspoon white vinegar
1 boneless skinless goose breast(both sides)
1/2 cup dry white wine
1/2 cup apple cider or apple juice
1/3 cup frozen orange juice concentrate, defrosted
1 1/2 teaspoons orange peel
2 tablespoons orange marmalade
In a med. mixing bowl combine milk and vinegar. Add goose breast turning to coat. Cover with plastic wrap. Refrigate 8 hrs. or overnite, turning once or twice.
Drain and discard milk mixture. In bowl, combine: wine, cider, concentrate and orange peel. Add goose, turning to coat. Cover with plastic wrap. Chill 4 to 6 hrs., turning once or twice.
Heat oven to 425 degreesF. Line 8' baking dish with heavy-duty foil. allowing foil to extend 10" on each side of dish. Drain wine mixture, reserving1/4 cup. Place goose in foil in dish. Pour reserved wine mixture over goose. Fold opposite sides of foil together in locked folds. Fold and crimp ends. Bake 30 to 35 minutes, or untill meat is desired doneness.
Fold back foil. Brush marmalade over goose. Bake open, 5 to 10 minuites, or untill marmalade is glazed adn meat is browned. Carve across grain in thin slices. ENJOY!!!!!!!!!!!!!!!!

yes sir...I have them print and sitting stuck to the front of my frig.

Just put together my new weber charcol grill and them ki-bobs will be a sizzling in about 2 hrs!
