....for goose breasts that are going in the smoker? I will be slicing them up after they cool and taking along on our trip to Arkansas next week. Any suggestions? Not too complicated now....I'm Polish and tend to confuse easily!

Here is a simple one that we like pretty well.
one part each of soy, teriyaki, and spicy oyster sauce.
Pierce breast filets with a fork and marinade for a couple hours.

Italian dressing, eh? Never tried it, mainly because it sounds so...... well......so vegetable oriented, I guess. Saw a deal on the tube about BBQ competitions the other day, and they said that nearly all the competitors used italian dressing marinade up front. Guess I really need to try it sometime -- like TODAY maybe?? :hest:
Chris, about how long do your normally marinate a breast filet?

Here's one that is always a hit.
1 cup Port Wine
1 cup Water
1/3 cup Olive Oil
1/4 cup Lemon Juice
1/4 cup Brown Sugar
2 cloves Garlic (minced)
1 medium Onion (minced)
1/2 ts.each of Parsley, Basil, Thyme, Tarragon, Ground Pepper
2 ts. Grated Lemon Zest

Try Dr. Pepper or Weinhard's root beer with a small touch of brown sugar.
