I cook a lot of my wild game with this method,. its fast easy and tasty
Goose breasts I slice into 3/4 ' steak cuts. Ive used cubed deer, elk antelope and desert sheep, duck,.
About a tablespoon of olive oil. Let the oil get hot.
add steaks,.. be-aware of splatering oil
Sort of sear both sides. turn the heat down to med., add a couple tablespoons of butter ( dont use margine),..add mushrooms if you wish.
Cook to med-rare,.. Dont over cook.
I soak up the the oliveoil-butter mixture as I cut bite sized pieces. I generally dont add seasoning while cookiing,.. my dog gets to clean the pan after its cooled down.:p
My kids will dip pieces in BBQ sauce, my wife likes a bit of honey mustard sometimes season salt. I sometimes will use a little horseradish if the meat is rare.
