My wife (a.k.a. Gertrude) came up with this recipe and we tried it this evening. It's quick, easy and another way to use duck or goose meat. Serves 2.



Gertrude's soon-to-be-famous Duck Hash!

Pound the breasts of one duck (2 pieces), then cut into 1/4 in. cubed pieces. Season with salt and pepper.

Finely chop two stalks celery, 1/2 medium sweet onion, 2 cloves fresh garlic and 4 strips of bacon.

Pre-cook 2 medium potatoes in the microwave. Cut into cubes.

Brown the bacon. Add the duck when the bacon is almost done.

Add celery, onion and garlic when the duck begins to loose its "pink" color. Don't over cook the duck!

Add the potatoes last.....when the onions are beginning to cook down.

Stir regularly while cooking.

Sprinkle with parsely just before serving.

We served it with fried eggs for supper this evening.

Feel free to add your own touch......this is just the foundation for a masterpiece in progress!!!! Add your favorite Cajun seasoning or whatever floats your boat!!! We're already talking about ways to improve it, like cutting back on the celery and adding some green peppers. Enjoy.

Sounds damn fine!

I make something very similar but use my "corned goose" as the meat.
